Personally I would drain some oil out stick in some wynns oil treatment and drive it, it's probably gummed up rings which may free off or clean if your lucky, worth a try for a bit messing about, over filling with oil will void the warranty :(

good call on the wynns, my ex father in law used to fill the engine with diesel and leave it overnight drain it and refill with oil - cure for stuck rings and other stuff he always said lol

rings on pistons have a small gap in them they seal and stop oil going up from the sump to the combustion area on the crown of the piston, they are sprung to allow expansion through the temp range, if one is gummed up and stuck in its groove in the piston then oil will find its way into the combustion area and there's your smoke, free it off so it can do its job and no smoke - the symptoms you show suggest it's sticking hence the sometimes/sometimes not.....

This might go back to when your resto was done you couldnt give it any real stick because the throttles didnt open fully and so it gummed up then.
Or is the oil on the side where the crankcase breather returns to the carb. If so it might just be the excess oil blowing out. Look inside the filters for lots of oil one side or the other.
