Last question honest. Recipe says 140deg on bottom shelf. My oven is a 1950's wallace and grommet jobby and I don't trust it so I'm cooking it in the microwave which doubles up as a fan oven. Any tips? Should I turn it down a bit? Cover the top? Anything? I would really like this cake to come out well.
Keep it low rather than high, you can always leave it in longer. Test with a skewer - put it in the middle and see if it comes out clean, then it's done through. No need to cover.
It's been emotional. I'll leave the marzipan and icing until later in the week. I've washed up and made curry at the same time. Drinking the copious quantities of brandy was a good idea but now I need a lie down. :-
I hope it turns out OK. Mary Berry says once you've done the marzipan, leave it a few days before doing the icing ... then leave the icing a few days before putting any decorations on ...
Thanks Mrs M, that sounds like a plan. I believe it's trad to stick the marzipan on with apricot jam? Good god, just listen to me.
Sounds familiar - not that I've ever eaten Christmas cake. Fruit cake is the work of the devil - give me a good old chocolate Yule log any day ) The only bit of Christmas cake I eat is the icing
