I like them poached but last time I tried it I ended up with a lot of white string in a pan of boiling water. In the real, practical world I usually fry them sunny side up.
Your issue there is the ‘boiling water’. Just simmering is all you need. I love poaching eggs in my van
The last time I actually had a scotch egg was in a pub, post lockdown, when for a while you could only get served beer with a 'substantial meal'. I think most of it went in the bin. I read about a time in New York, when similar rules applied to get served alcohol on a Sunday, that there was a communal sandwich in every bar, years old and often made of plaster, which was brought to your table with each drink, then taken away again. We were in Wigan yesterday, on my bus/rail pass travels, in the station underpass there are panels showing an A-Z of Wigan dialect, one of the entries is for the Wigan Kebab, which is a pie served between two slices of bread

I love poached egg with cherry tomatoes and avacado on toast. Unfortunately our new dangled induction hob doesn’t support my old poaching pan
My free egg supply has dried up with the bird flue, there is a free range egg producer up my lane, there are dozens who nip out and lay in the hedges and me dogs find them when the Mrs is walking them around the fields. They are all in the barns now .
Drink plenty of red wine - a nice Valpolicella will do. That'll clear them out. It's like drain cleaner.
