It's that time when anyone lucky enough to have some fruit trees is probably eating a lot of apples. We've got cox's and bramleys... This week we're having an apple based dessert every evening. First off was baked apples, then good old apple crumble and tonight a delicious apple cake. Need some more ideas...

Stewed apple and custard in layers? I also have loads of apples at the moment, and to save as many as possible from going off I've stewed them and frozen them. When I can't be bothered to make crumble/want to pretend to be saving calories I make up several pots of this (Gu pots leftover from previous sins against diets) and stick them in the fridge to cool and eat them as and when I feel like it Apple Betty (like crumble, but made with bread crumbs) Apple cobbler (like crumble but with a scone topping) Apple pie Apple puff pastry (really easy with the puff pastry you just buy rather than make) Stewed apple bases to creme brulée (needs lots of eggs and cream) Apple soufflé Apple and cinnamon filo tartlets Apple pancakes (great with cinnamon, sugar and ice cream) If you get sick of apples on their own, blackberries do a surprising amount to liven up an apple dessert (as seen from the perspective of someone who is getting tired of apples!)
We have a huge glut. Most of them stay on the ground - when the weather gets really cold in December / January the Fieldfares and Blackbirds eat them.
