Sheep and cows eat grass, not known for it's high fat content, so why is lamb fatty and beef comparitively lean?
we had a leg of lamb given to us last week. It was amazing. Hardly any fat. Buy organic, from a local slaughterhouse if you can.
The fat comes mainly on the outside of the beast - there is much more meat between the outside and bones of a cow! Have a look at comparative cuts - a leg of lamb is certainly lean but then again so are the joints cut from the legs of cattle (topside etc). For a lovely fatty bit o'beef look at a well produced sirloin or rib (saddle or rack on a sheep). Fat on meat is where it's at (from a flavour and savour point of view) Yum!
