Ive only just watched them and I can honestly say, brilliant. I will be trying the ginger beer, although I will actually leave it 5 days. Bit of a give away when its still steaming, after 5 days, when you bottle it.
Oh and the fact the saucepans were still on the hob, oh and your wearing the same shirt. Lol, continuity anyone? Just playing. It's the info that's important. Also the campden tablets are not needed as you are boiling everything and as such removing contaminates. Use them on your jugs, bottles and demo johns though. Have you tried cider? We made up 10 gallons of the stuff from bramleys, 14%. Had to add a little sugar once bottled to bring the sweetness up but lovely to drink. Proper scrumpy. No fizz.

Cider......Simple! Apple juice and yeast! It's not Westons but it will get you tipsy! Out of interest bodyrock, how did you get he juice from the apples?
If you use apple juice don't use from concentrate. Use pure fresh and check the ph levels, should be about 7.4. As for the homemade jobby what we did is cut the apples into quarters, put them in a big bucket and smash the life out of them till it was pulp. Once done we bagged it into hessian and built a press from oak, metal threaded bar and a car jack. Squeezed the life out of it and resulted in fresh juice.
