    While regular butter is delicious and versatile in cooking, it has a few limitations that make clarified butter a better option for certain cooking methods.

    One of the primary limitations of regular butter is its low smoke point. The smoke point is the temperature at which a fat begins to break down and smoke, which can impart a burnt flavor to food and release harmful compounds. The milk solids in regular butter begin to burn at around 350°F (177°C), which is why it's not recommended to use it for high-heat cooking methods such as frying and sautéing.

    In contrast, clarified butter has a higher smoke point of around 450°F (232°C), making it a more suitable option for high-heat cooking. The process of clarifying butter removes the milk solids and water, leaving behind pure butterfat that can withstand higher temperatures without burning.

    Clarified butter also has a longer shelf life than regular butter. The milk solids and water in regular butter can cause it to spoil more quickly, especially if stored at room temperature. Clarified butter, on the other hand, can be stored at room temperature for several weeks without spoiling, making it a more practical option for long-term storage.

    Finally, some people prefer the nutty, rich flavor of clarified butter over regular butter, especially in certain dishes such as Indian and Middle Eastern cuisine. The process of clarifying the butter intensifies its flavor and removes any unwanted impurities, resulting in a smoother, more flavorful cooking fat.

    It's not that simple. What butter is like what oil? Should you use salted, unsalted, spreadable, vegan . . .
