If the photo was taken whilst your camping, all the better! Recipes must be based on raw ingredients (sorry Ricky your pot noodle instructions don't count ) and be camper/2 ring friendly. Lou's camping curry stew. It's not Lou's really it's mine, but Lou makes it too. You will need. Lamb. 1lb any cheap lamb. 2 large Onions 4 medium potatoes peeled and cut 2 large parsnips. Peeled and cut 2 oxo cubes 1 tablespoon of gravy granules for a little thickening. Curry powder to taste Salt to taste. Big pot. Half fill the pot with water and add a good pinch of salt. Add meat, potatoes, onions. ( Add as many veg and amount of each as you like really) Oxo and bring slowly to the boil. When it begins to boil turn to simmer and add curry powder and gravy. Leave to simmer for a few hours adding salt and curry powder to taste. I sometimes add a half cup of pearl barley for that bonfire night stew taste, but not always Serve in dishes with loads of bread and butter and chianti. Perfect easy meal for cold winter camping. OK up for this one...... One pot wonder....picture to follow as its on the stove now.....and I'm having a beer with dogs on my lap, all enjoying the last sun of the weekend on the decking Hearty Lamb shanks..... olive oil 2 red onions - halved and thickly chopped 300ml red wine 200 ml stock (I use a veg one) 2 sticks of rosemary 8 garlic cloves, peeled and left whole 1 tbsp of redcurrent jelly 2 lamb shanks to do it.... get the onion in your pot, bit of olive oil.... cook till translucent.... while this is happening.....get a 1 litre measuring jug..measure out the stock, then the wine on top, bung everything except the shanks in to the jug (for camp ease) as you sort.....once onions are ready...tip jug contents into pot....add the shanks...... simmer for 5-6 hours.... after this time, carefully remove the shanks... the meat will fall of the bone.... for the gravy, either reduce sauce, or whack some cornflour in the pot... sides.... I do veg....bag of the frozen veg...boiled up, whack some spinach in after 5 mins..... OOoooooossssshhhhhhh..... amazing grub on 2 gas rings!!!! Cooked this on fires, stoves but today the slowcooker..... amazingly easy, filling camp feast, pictures to follow.....
My other half preps some amazing dishes which she freezes. Simple heat up jobs with rice or potatoes and veg in the bus. Does that count?
I'd like a spatula please ............so here's Mrs Monkey's Creamy Pesto Chicken Pasta...... Ingredients you will need: Pine nuts Olive oil 1 onion A few cloves of garlic (you choose the number to suit your own personal taste) Diced chicken breast White wine 1 Green pepper Jar of green pesto Creme Fraiche Fresh basil leaves Pasta of your choice Black pepper, parmesan & bread to accompany Equipment you will need: Frying pan Saucepan Sharp knife & chopping board Spatula/spoon This takes about half an hour on a camper's 2 ring hob Begin by toasting some pine nuts in a frying pan then remove and set aside Pour yourself a glass of wine and take a sip Chop an onion and a couple of cloves of garlic and cook on a low heat until soft but not brown Add some diced chicken breast and cook until sealed Take another sip of wine Add a splash of white wine (or rose if you've drunk all the white!) Take a sip of wine, dice the green pepper and add it to the pan While that's cooking, fill a saucepan with water, add a pinch of salt and bring to the boil Don't forget your wine! Next add a jar of green pesto and return the pine nuts to the pan you'll probably need to top up your wine glass now..... and take a sip then add pasta of your choice to the pan of boiling water (@theBusmonkey insists on spaghetti ) Add creme fraiche to your taste, I usually use three quarters of a standard size pot Don't forget about your wine And get the other half to set the table as we're almost done Add some freshly torn basil to the pan Drain the pasta and serve........
.......grate some fresh parmesan on top, break the bread & drizzle with olive oil Toast the chef and enjoy!
