Tripe, it’s a word that has come to mean ‘pointless’, ‘silly’, or ‘false’. These terms are only appropriate in how the reputation of tripe as a culinary component has been undermined. Tripe is the edible lining of farm animals, primarily cattle. While it sounds off-putting to the average palette tripe can be formed into an incredible meal full of flavour. World Tripe Day celebrates this much-reviled dish and strives to return it to a place of honour among meats. I'm sure this is a more political day than they're making out Thankfully, it's not summer
Not a big fan, but very traditional in Cork along with Drisheen (like black pudding but with only blood). Like other Ports supplying ships in the past these were the left overs which couldn't be preserved after processing supplies for trans Atlantic ships. Other specialities are butterd eggs (the butter seals and preserves the eggs) and spiced beef.

We bought some frozen tripe for our dogs once - cooking it stank the house out - never again. There used to be a van round our way when I was a kid - used to sell "milk meat" aka tripe - usually eaten with onions - yuk.
I was going to say don't cook it or you'll have to move house! Our dogs are all fed a raw diet of meat offal and bone, no veg or grain. It's advisable to freeze the meat for a couple of weeks to kill off parasites but the high acidity in the stomach of a prey-diet dog kills off just about anything.
