Cheers DB I've seen some posts on The Samba where they did this. Personally not my thing but i do not see why it cannot be done. The cabinets will no longer have any protection so i reckon chips and scrapes will happen more often and you will need to fill them. Have a little search on The Samba.
Cheers lofty, I'll take a look. I've also seen a couple of things online about restoring the laminate with furniture wax. I may test out that on my faded bits...
If it is just faded, I would also try to rejuvenate first. If its chipped or missing and you want to match the old laminate, and you can wait a bit, I might have some salvageable bits when I start stripping mine.
