Lovely country is Peru, even in a state of 'disarray'! (and yes, like everyone else I'm more than envious of the big adventure now my travel days are.... not "over", but "postponed" until I've done more sensible stuff for a while).
I'd recommend being a little cautious with the ceviche... it caused me to bring an intestinal interloper back to the UK with me many years ago, which in turn made my doctor extremely excited, caused me to be quarantined for 2 weeks, involved a long course of antibiotics that the pharmacist had to find in the back of the cupboard and physically blow the dust off, and resulted in a notification to the department of health in case there was an outbreak in the UK so they would know where (who) it originated from. Fun and games.
