First posted December 2010 JBA'S CHORIZO IN A ONION AND RED WINE SAUCE A delicious snack with nice crusty bread is chorizo and red onion in red wineeel, half and slice 2 red onions,Cut up some chorizo in to 1cm pieces.Fry the onions for 5 minutes until they soften and then add the chorizo,fry together so the chorizo releases it's oil and starts to crisp on the edges,add a glass of red wine and reduce to half the volume.Serve.
This is also very good in a risotto, do the same as above, I also add a few mushrooms. Just add the wine first and let it soak up into the rice, then start with the stock...
