I'll take some pics in the morning - it involves me taking the cover off and putting the roof up. I don't have the bunks fitted, but it will show where the holes in the framework are.
Take care when the sides of the grp roof are reduced to allow for the reprofiling of the ends. The gap between the outboard bunk rail and the underside of the roof may be quite small... In fact it might be easier to build up the ends to suit the van roof profile rather than to cut away material to increase the radius... Just a thought.
There's loads of room up there, but it's already been on a bus and the grp's been built up as you suggest. I'd have hacked it down a bit myself...
