first posted February 2011 Dogs mince and stilton pie ok, so a real quick and fairly cheap dish that tasted awesome and looks good too! british beef mince! 1 onion butter beef oxo cube stilton 1 beaten egg and pastry brush pack of shortcrust pastry(or make some) salt and pepper to taste baking beads or dried chick peas take an onion and finely dice it and fry it off till its just started to brown. take some good minced beef, or finely chopped steak if you're feeling adventurous and just got paid and fry off with the onions. while you're doing this line a small pie dish with butter and put a circle of pastry in the bottom and line the edges with a strip of pastry too. put some baking parchment over the pastry, fill with the baking beans and blind bake till the pastry is cooked but not browning. when the mince is cooked crumble the oxo cube into it and add salt and pepper to taste. npot too much salt as theres some in the oxo cube. take this off the heat and crumble in the stilton, more or less depending on how cheesy you like it(if you dont like stilton use mature cheddar). empty the baking beads out of the pie case and cram it full of the mince mix. egg wash round the top of the pie crust and cut a circle of pastry and place it on top. decorate as desired, half way through cooking egg wash the top and let it brown enjoy!
