I think the practical advice is to keep all receipts, but only add everything up when you start thinking of selling... it will knock some sense into you.
I have two wallets full of receipts, one for the boat and one for the van ... needless to say the one for the boat is much bigger. I used to keep a spreadsheet but stopped a long time ago when I saw how much it showed I was spending
I did keep the receipts when I restored my current bus. One day I started to add them up but part through I had a change of heart. I have a rough idea how much it cost and I'll stick with that, I don't want to know if I've underestimated by £5k.
I've kept a spreadsheet with every penny I've spent on the bus recorded. Helps me keep one foot in reality world.
I've stopped spending - for now! I do also subtract anything I sell on - that's not a very long list.
If I had a foot in reality world I'd sell it quick, buy a £500 car, B&B/tent and spend the change on chocolate.
I keep all receipts... Never added them up. I keep a written book in glove box with all petrol bought... I don't mind that as I can't enjoy the bus without spending on fuel.

I've kept a few receipts but mainly for the high priced 'stuff' which could have issues, Dometic fridge being the one that comes to mind . During the mini resto i spent farsands at schofields over 18 months but as the purchases wouldn't be returned I checked it was all there and binned the receipt , in denial I suppose I have a rough idea how much I've spent but as @zedders rightly states , knowing to the penny would just pee me off so why bother ?? I also like to forget the 5 years mine filled 1/3 of my unit - space that cost £ when it should have been earning £...and the 6 months rent after I gave up working and pottered it together. Holy moly.
Skip more like! It was in the way and life would have been easier without it there. Methinks you're considering your own workshop full of half finished projects.
I’ve got a box file full of receipts that I will one day add up, I’ve got a guesstimate figure of 20k - but that’s not changed for a few years! I’ve lost track of alot of the consumables, bits bought off here/facebook/ebay, diesel spent traipsing all over the country, bits I’ve resold, bits I still need to sell, workshop rent etc etc Annnnd, it’s still not on the road!
I only have the beetle that must not be mentioned in the workshop now, and that’s just a shell so barely takes any room
